How To Make Quinoa and Bacon Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 6 slices bacon, diced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1/4 cup chopped parsley
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa and add to a pot with the water. Bring to a boil and let simmer for 20 minutes.

  2. Cook bacon in a pan until crispy. Remove bacon and set aside, leaving the bacon grease in the pan.

  3. In the same pan, sauté onion and bell pepper until tender.

  4. In a small bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.

  5. In a large bowl, combine cooked quinoa, bacon, sautéed vegetables, parsley, and dressing. Mix well.

  6. Serve the salad at room temperature or chilled.
