Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 8 ounces mushrooms, sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. Rinse the quinoa under cold water and drain.

  2. In a medium saucepan, bring the vegetable broth to a boil.

  3. Add the quinoa, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

  4. In a large skillet, heat the olive oil over medium heat.

  5. Add the diced onion and minced garlic and cook until softened, about 5 minutes.

  6. Add the sliced mushrooms, dried thyme, salt, and pepper. Sauté until the mushrooms are golden brown and tender, about 7-8 minutes.

  7. Add the cooked quinoa to the skillet and stir to combine.

  8. Cook for an additional 2-3 minutes to heat through.

  9. Garnish with fresh parsley and serve hot.
