Savory and filling stuffed portobello mushrooms, perfect as an appetizer or main course.

Ingredients

  • 4 large Portobello mushrooms
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat oven to 375°F.

  2. Remove stems from mushrooms and scrape out gills with a spoon.

  3. In a small bowl, mix breadcrumbs, Parmesan cheese, garlic, olive oil, salt, pepper, and chopped parsley.

  4. Stuff each mushroom generously with breadcrumb mixture.

  5. Place mushrooms on a baking sheet with parchment paper.

  6. Bake for 20-25 minutes until mushrooms are tender and tops are golden brown.

  7. Serve hot and enjoy!
