How To Make Sausage & lentil one-pot

Ingredients
- 4 sausages
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 cup dried lentils
- 4 cups chicken or vegetable broth
- 1 bay leaf
- 2 teaspoons dried thyme
- Salt and pepper to taste
Instructions

In a large pot, brown the sausages over medium heat until cooked through. Remove from pot and set aside.

In the same pot, sauté the onion, garlic, carrot, and celery until softened.

Add the lentils, broth, bay leaf, thyme, salt, and pepper to the pot. Stir well to combine.

Bring the mixture to a boil, then reduce heat and simmer for 30 minutes, or until the lentils are tender.

Slice the cooked sausages and add them back to the pot. Simmer for an additional 5 minutes.

Remove the bay leaf before serving. Serve hot.
