How To Make Polish Sausage and Lentil Soup

Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 3 stalks celery, diced
  • 3 carrots, peeled and diced
  • 2 potatoes, peeled and diced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 4 cups chicken broth
  • 1 cup lentils, rinsed and drained
  • 1 lb Polish sausage, sliced
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the onion, garlic, celery, and carrots. Cook for 5 minutes, stirring occasionally.

  2. Add the potatoes, thyme, oregano, and paprika. Cook for another 5 minutes.

  3. Pour in the chicken broth and bring to a simmer. Add the lentils and sliced Polish sausage. Cook for 30-40 minutes, or until the lentils are tender and the sausage is cooked through.

  4. Season with salt and pepper to taste. Serve hot.
