Lincolnshire Sausage & Lentil Simmer Recipe

How To Make Lincolnshire Sausage & Lentil Simmer

Ingredients

  • 4 Lincolnshire sausages
  • 1 cup dried green or brown lentils
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 2 cloves garlic, minced
  • 2 bay leaves
  • 4 cups chicken or vegetable broth
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, heat some oil over medium heat and add the sausages. Cook until browned on all sides. Remove from the pot and set aside.

  2. In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for another minute.

  3. Add the lentils, bay leaves, chicken or vegetable broth, and tomato paste to the pot. Stir well and bring to a boil. Reduce heat to simmer and let cook for 20 minutes, or until the lentils are tender.

  4. Meanwhile, slice the cooked sausages into bite-sized pieces. Add them back to the pot and let them simmer with the lentils for an additional 10 minutes.

  5. Season with salt and pepper to taste. Remove the bay leaves.

  6. Serve the Lincolnshire sausage and lentil simmer hot, garnished with fresh parsley.
