How To Make Lincolnshire Sausage & Lentil Simmer
Serves:
Ingredients
- 4 Lincolnshire sausages
- 1 cup dried green or brown lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 bay leaves
- 4 cups chicken or vegetable broth
- 1 tbsp tomato paste
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
-
In a large pot, heat some oil over medium heat and add the sausages. Cook until browned on all sides. Remove from the pot and set aside.
-
In the same pot, add the onions, carrots, and celery. Cook until the vegetables are softened, about 5 minutes. Stir in the minced garlic and cook for another minute.
-
Add the lentils, bay leaves, chicken or vegetable broth, and tomato paste to the pot. Stir well and bring to a boil. Reduce heat to simmer and let cook for 20 minutes, or until the lentils are tender.
-
Meanwhile, slice the cooked sausages into bite-sized pieces. Add them back to the pot and let them simmer with the lentils for an additional 10 minutes.
-
Season with salt and pepper to taste. Remove the bay leaves.
-
Serve the Lincolnshire sausage and lentil simmer hot, garnished with fresh parsley.
