Ingredients

  • 1 cup red lentils
  • 1 chorizo sausage, sliced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken or vegetable broth
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the red lentils under cold water and set aside.

  2. In a large pot, cook the chorizo slices over medium heat until crispy. Remove from the pot and set aside.

  3. In the same pot, add diced onion and minced garlic. Cook until translucent.

  4. Add diced carrots and celery to the pot and cook for another 5 minutes.

  5. Add the red lentils, chicken or vegetable broth, smoked paprika, cumin, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes or until the lentils are cooked and tender.

  6. Use an immersion blender or a regular blender to blend the soup until smooth. Adjust the consistency by adding more broth if desired.

  7. Serve the soup hot, garnished with the crispy chorizo and chopped parsley.
