Ingredients

  • 4 sausages, sliced
  • 2 cups of mixed vegetables (carrots, bell peppers, zucchini), chopped
  • 1 cup of puy lentils
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of smoked paprika
  • Salt and pepper, to taste
  • 3 cups of vegetable broth

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium heat.

  3. Add the sausages and cook until browned on all sides. Remove from the pot and set aside.

  4. In the same pot, add the onion, garlic, and mixed vegetables. Cook until the onion becomes translucent.

  5. Add the dried thyme, smoked paprika, salt, and pepper. Stir well to coat the vegetables with the spices.

  6. Add the puy lentils and vegetable broth to the pot. Bring to a boil.

  7. Once boiling, cover the pot and transfer it to the preheated oven. Bake for 30 minutes or until the lentils are tender.

  8. Remove from the oven and stir in the cooked sausages.

  9. Serve hot and enjoy!
