Ingredients

  • 2 pounds beef chuck roast
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 small onion, finely chopped
  • 2 chipotle peppers in adobo sauce, chopped
  • 2 tablespoons lime juice
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons ground cumin
  • 2 teaspoons dried oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cinnamon
  • 1 cup beef broth
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 325°F (160°C).

  2. Season the beef chuck roast with salt and pepper on all sides.

  3. Heat the vegetable oil in a large Dutch oven or oven-safe pot over medium-high heat. Add the beef roast and sear on all sides until browned, about 3-4 minutes per side.

  4. Remove the beef from the pot and set aside.

  5. In the same pot, add the minced garlic and chopped onion. Cook until softened, about 2-3 minutes.

  6. Stir in the chipotle peppers, lime juice, apple cider vinegar, cumin, oregano, smoked paprika, and cinnamon. Cook for an additional 1-2 minutes.

  7. Return the beef to the pot and add the beef broth. Bring to a simmer.

  8. Cover the pot and transfer it to the preheated oven. Cook for 4-5 hours, or until the beef is tender and easily shreds with a fork.

  9. Once cooked, remove the beef from the pot and shred it using two forks.

  10. Return the shredded beef to the pot and mix it with the cooking juices.

  11. Serve the Barbacoa-style shredded beef in tacos, burritos, or as a filling for enchiladas. Enjoy!
