How To Make Chipotle Barbacoa Recipe

Ingredients
- 2 lbs beef chuck roast
- 3 chipotle peppers in adobo sauce, minced
- 1/2 cup beef broth
- 1/2 cup apple cider vinegar
- 4 cloves garlic, minced
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 tablespoon smoked paprika
- 1 teaspoon ground cinnamon
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon ground cloves
- 1 tablespoon vegetable oil
Instructions

In a large skillet, heat vegetable oil over medium-high heat. Sear the beef chuck roast on each side until browned, about 3 minutes per side.

Transfer the seared beef to a slow cooker.

In a small bowl, mix together minced chipotle peppers, beef broth, apple cider vinegar, minced garlic, ground cumin, dried oregano, smoked paprika, ground cinnamon, salt, black pepper, and ground cloves.

Pour the chipotle pepper mixture over the beef in the slow cooker.

Cover the slow cooker and cook on low heat for 4 hours, or until the beef is tender and easily shreds with a fork.

Once cooked, remove the beef from the slow cooker and shred it using two forks.

Return the shredded beef to the slow cooker and mix it with the cooking liquid.

Cook on low heat for an additional 30 minutes to allow the flavors to meld together.

Serve the Chipotle Barbacoa in tacos, burritos, or bowls, and garnish with your favorite toppings.
