  • 2 cups fresh rhubarb, chopped

  • Lime wedges and extra mint, for garnish

Instructions

  1. In a large cocktail shaker, muddle together the rhubarb, mint leaves, lime juice, and simple syrup until well combined.

  2. Add the rum and ice to the shaker and shake vigorously for 30 seconds.

  3. Strain the mixture into cocktail glasses filled with ice and top each glass with a splash of club soda.
