  • 4 cups rhubarb, chopped
  • 1/2 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, chilled and cubed
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375°F.

  2. In a large bowl, mix rhubarb, sugar, flour, vanilla extract, cinnamon, and nutmeg until well combined.

  3. Pour rhubarb mixture into a 9-inch baking dish.

  4. In another bowl, mix flour, sugar, baking powder, and salt.

  5. Cut in butter with a pastry blender or fork until the mixture resembles coarse crumbs.

  6. Stir in milk until just combined.

  7. Drop spoonfuls of dough over the rhubarb mixture.

  8. Bake for 45 minutes or until the topping is golden brown and the rhubarb is tender.

  9. Serve warm with ice cream or whipped cream.
