How To Make Rhubarb Bellini Recipe
A refreshing and fruity cocktail perfect for a springtime brunch or special occasion.

Ingredients
- 1 cup chopped rhubarb
- 1/2 cup sugar
- 1/4 cup water
- 1 bottle of chilled Prosecco or sparkling wine
- Fresh rhubarb or strawberries for garnish
Instructions

In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until rhubarb is soft and mixture has thickened.

Remove from heat and let cool to room temperature.

Using a blender or immersion blender, puree rhubarb mixture until smooth.

Divide puree among 4 champagne flutes.

Top each glass with chilled Prosecco or sparkling wine.
