Ingredients

  • 1 cup chopped rhubarb
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 bottle of chilled Prosecco or sparkling wine
  • Fresh rhubarb or strawberries for garnish

Instructions

  1. In a small saucepan, combine chopped rhubarb, sugar, and water. Bring to a boil, then reduce heat and simmer for 10-15 minutes, until rhubarb is soft and mixture has thickened.

  2. Remove from heat and let cool to room temperature.

  3. Using a blender or immersion blender, puree rhubarb mixture until smooth.

  4. Divide puree among 4 champagne flutes.

  5. Top each glass with chilled Prosecco or sparkling wine.

  6. Garnish with fresh rhubarb or strawberries and serve immediately.
