How To Make Roasted Rhubarb with Mascarpone

Ingredients
- 4 stalks of rhubarb, trimmed and cut into 1-inch pieces
- 2 tbsp of honey
- 1 tsp of vanilla extract
- 1 cup of mascarpone cheese
- 1 tbsp of powdered sugar
- 1/4 cup of toasted almond flakes
Instructions

Preheat the oven to 400°F (200°C).

In a baking dish, toss the rhubarb pieces with honey and vanilla extract until well coated.

Roast the rhubarb in the preheated oven for 15-20 minutes, or until it is soft and slightly caramelized.

While the rhubarb is roasting, in a small bowl, whisk together the mascarpone cheese and powdered sugar until smooth.

Once the rhubarb is done roasting, remove it from the oven and let it cool slightly.

Serve the roasted rhubarb with a dollop of the mascarpone mixture on top, sprinkled with toasted almond flakes for added crunch.
