  • 1 lb fresh okra, washed and chopped
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 tomatoes, chopped
  • 1 carrot, diced
  • 2 cups vegetable broth
  • 1 tsp cumin powder
  • 1 tsp paprika
  • 1/2 tsp turmeric powder
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic. Sauté until fragrant and onions are translucent.

  2. Add chopped tomatoes, diced carrot, and chopped okra to the pot. Cook for about 5 minutes, stirring occasionally.

  3. Pour in the vegetable broth and add cumin powder, paprika, turmeric powder, salt, and pepper. Stir well to combine all the ingredients.

  4. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes, or until the vegetables are tender.

  5. Remove from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.

  6. Return the pureed soup to the pot and heat over low heat for a few minutes.

  7. Serve hot, garnished with fresh cilantro.
