Ingredients
- 1 tbsp oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 bell peppers, diced
- 2 celery stalks, diced
- 1 cup okra, sliced
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tsp paprika
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper, to taste
- Cooked rice, for serving
- Fresh parsley, chopped (for garnish)
Instructions

Heat oil in a large pot over medium heat. Add the onion and garlic and sauté until fragrant and tender.

Add the bell peppers and celery to the pot and cook until they begin to soften, about 5 minutes.

Stir in the okra, diced tomatoes, vegetable broth, paprika, thyme, oregano, salt, and pepper. Bring to a simmer and let cook for 30 minutes to allow flavors to meld together.
