How To Make Evelyn’s Gumbo Recipe
A delicious, Cajun-inspired stew with okra, sausage, and shrimp in a flavorful roux.

Ingredients
- 1/2 cup vegetable oil
- 1/2 cup flour
- 1 onion, diced
- 1 green bell pepper, diced
- 3 celery stalks, diced
- 4 garlic cloves, minced
- 2 bay leaves
- 1 tsp dried thyme
- 1 tsp paprika
- 1 tsp file powder
- 1/4 tsp cayenne pepper
- 1 lb andouille sausage, sliced
- 1 lb okra, sliced
- 1 can diced tomatoes
- 4 cups chicken broth
- 1 lb shrimp, peeled and deveined
- 2 tbsp parsley, chopped
Instructions

Heat oil in a heavy-bottomed pot over medium heat.

Sprinkle in flour and whisk constantly until roux turns dark brown.

Add onion, green bell pepper, celery, and garlic. Cook for 10 minutes.

Stir in bay leaves, thyme, paprika, file powder, cayenne, and sausage. Cook for another 10 minutes.

Add okra, tomatoes, and chicken broth. Simmer for 30 minutes.

Stir in shrimp and cook until pink, about 5 minutes.

Season with salt and pepper to taste. Serve with rice and garnish with parsley.
