How To Make Spicy Turkey Sweet Potatoes

Ingredients

  • 1 lb ground turkey
  • 2 sweet potatoes, peeled and diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, diced
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp chili powder
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh cilantro, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, and jalapeno pepper, and sauté until the onion is translucent.

  3. Add the ground turkey to the skillet and cook until browned, breaking it up with a spatula as it cooks.

  4. Stir in the cumin, paprika, chili powder, salt, and pepper.

  5. Add the diced sweet potatoes to the skillet and mix well.

  6. Transfer the mixture to a baking dish and cover with aluminum foil.

  7. Bake for 30 minutes, then remove the foil and bake for an additional 10-15 minutes, or until the sweet potatoes are tender.

  8. Garnish with fresh cilantro before serving.
