Ingredients

  • 2 aubergines, sliced
  • 4 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 2 red chili peppers, sliced
  • 1 green bell pepper, sliced
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tbsp tomato ketchup
  • 1 cup vegetable broth
  • Salt, to taste
  • Spring onions, chopped (for garnish)

Instructions

  1. Heat 2 tbsp vegetable oil in a pan and fry the aubergine slices until golden brown. Remove from pan and set aside.

  2. In the same pan, heat the remaining oil and sauté garlic, ginger, and chili peppers for a minute.

  3. Add the bell pepper and cook for another minute.

  4. In a small bowl, mix soy sauce, rice vinegar, sugar, and tomato ketchup. Pour this mixture into the pan and stir to combine.

  5. Add the fried aubergine slices back into the pan and pour in the vegetable broth. Cook on medium heat for 10-15 minutes until the sauce thickens and the aubergine is cooked through.

  6. Season with salt to taste.

  7. Garnish with chopped spring onions.

  8. Serve hot with steamed rice.
