How To Make Aubergine with Prawns in Oyster Sauce

Ingredients
- 2 medium aubergines, sliced
- 300g prawns, peeled and deveined
- 3 cloves of garlic, minced
- 1 red chili, thinly sliced
- 3 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tbsp cornstarch, dissolved in 2 tbsp water
- 2 tbsp vegetable oil
- Salt, to taste
- Spring onions, for garnish
Instructions

Heat the vegetable oil in a wok or large pan over medium heat.

Add the garlic and chili, and sauté until fragrant.

Add the aubergine slices and stir-fry until they start to soften.

Push the aubergines to one side of the pan and add the prawns. Cook until they turn pink.

In a small bowl, mix together the oyster sauce and soy sauce. Pour the mixture over the aubergines and prawns.

Stir well and cook for another minute.

Add the cornstarch mixture and stir until the sauce thickens.

Season with salt to taste.

Serve hot, garnished with spring onions.
