How To Make Northern Italian Beef Stew

Ingredients
- 2 lbs beef chuck, cut into 1-inch cubes
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cloves garlic, minced
- 1 cup red wine
- 1 can (14 oz) diced tomatoes
- 2 cups beef broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat the olive oil over medium heat. Add the beef cubes and brown them on all sides. Remove the beef from the pot and set aside.

In the same pot, add the diced onion, carrots, celery, and minced garlic. Cook until the vegetables are softened and fragrant.

Return the beef to the pot and pour in the red wine. Let it simmer for a few minutes to cook off the alcohol.

Add the diced tomatoes, beef broth, dried thyme, dried rosemary, salt, and pepper. Stir everything together and bring to a boil.

Reduce the heat to low, cover the pot, and let the stew simmer for about 2 to 3 hours, or until the beef is tender.

Taste the stew and adjust the seasoning if necessary. Garnish with fresh parsley before serving.
