How To Make Italian Vegetable Rice Soup

A quick and easy healthy recipe that is fitting to be on your go-to recipes list! It's the perfect vegetable dish with an array of flavorful vegetables, cooked with rice for balance, then finally seasoned with Italian herbs for a full-bodied meal.

  • 6 cups vegetable stock (or chicken stock)
  • 2 carrots (peeled and diced)
  • 1 zucchini (diced)
  • 1 lb Great Northern beans (undrained)
  • 1 ½ cups quick cooking rice
  • 1 tsp Italian herb seasoning
  • ¼ cup Parmesan cheese (grated )
  1. Bring stock and carrots to a boil in a saucepan over high heat.
  2. Stir in next 4 ingredients.
  3. Cook about 5 minutes, until vegetables are just tender.
  4. Serve sprinkled with Parmesan.
