Serves:
Ingredients
- 1 pound of chicken, diced
- 1 pound of pork, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 2 cups of frozen lima beans
- 2 cups of frozen corn
- 2 cups of diced tomatoes
- 1 cup of barbecue sauce
- 1 cup of chicken broth
- 2 tablespoons of Worcestershire sauce
- 1 tablespoon of brown sugar
- Salt and pepper to taste
Instructions
-
In a large pot, heat some oil over medium heat. Add the diced chicken and pork and cook until browned.
-
Add the chopped onion and minced garlic to the pot and cook until the onion becomes translucent.
-
Add in the frozen lima beans, frozen corn, diced tomatoes, barbecue sauce, chicken broth, Worcestershire sauce, brown sugar, salt, and pepper. Stir to combine.
-
Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, stirring occasionally.
-
After simmering, taste the stew and adjust the seasoning if needed. If the stew is too thick, you can add more chicken broth to thin it out.
-
Let the stew simmer for another 30 minutes, or until the meat is tender and the flavors are well combined.
-
Serve the Easy Brunswick Stew hot and enjoy!
