  • 1 pound of chicken, diced
  • 1 pound of pork, diced
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 2 cups of frozen lima beans
  • 2 cups of frozen corn
  • 2 cups of diced tomatoes
  • 1 cup of barbecue sauce
  • 1 cup of chicken broth
  • 2 tablespoons of Worcestershire sauce
  • 1 tablespoon of brown sugar
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced chicken and pork and cook until browned.

  2. Add the chopped onion and minced garlic to the pot and cook until the onion becomes translucent.

  3. Add in the frozen lima beans, frozen corn, diced tomatoes, barbecue sauce, chicken broth, Worcestershire sauce, brown sugar, salt, and pepper. Stir to combine.

  4. Bring the stew to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour, stirring occasionally.

  5. After simmering, taste the stew and adjust the seasoning if needed. If the stew is too thick, you can add more chicken broth to thin it out.

  6. Let the stew simmer for another 30 minutes, or until the meat is tender and the flavors are well combined.
