How To Make Brunswick Stew

Ingredients

  • 1 lb of chicken breast, diced
  • 1 lb of pork shoulder, diced
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 1 can (14.5 oz) of diced tomatoes
  • 2 cups of chicken broth
  • 2 cups of beef broth
  • 2 medium potatoes, peeled and diced
  • 2 carrots, peeled and diced
  • 1 cup of frozen corn
  • 1 cup of frozen lima beans
  • 1/4 cup of ketchup
  • 2 tbsp of Worcestershire sauce
  • 1 tbsp of brown sugar
  • Salt and pepper, to taste

Instructions

  1. In a large pot, heat some oil over medium heat. Add the diced chicken and pork, and cook until browned. Remove from the pot and set aside.

  2. In the same pot, add the chopped onion and minced garlic. Cook until softened and fragrant.

  3. Add the diced tomatoes, chicken broth, and beef broth to the pot. Bring to a simmer.

  4. Add the diced potatoes, carrots, corn, and lima beans to the pot. Stir in the ketchup, Worcestershire sauce, and brown sugar. Season with salt and pepper.

  5. Return the browned chicken and pork to the pot. Stir well to combine.

  6. Cover the pot and let the stew simmer for about 2 hours, or until the meat is tender and the flavors are well combined.

  7. Serve hot and enjoy!
