How To Make Daube of Pork

Ingredients
- 2 lbs pork shoulder, cut into cubes
- 2 tbsp olive oil
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 1 cup red wine
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 bay leaves
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions

Heat olive oil in a large pot or Dutch oven over medium heat. Brown the pork cubes in batches and set aside.

In the same pot, sauté the onion, carrots, celery, and garlic until softened.

Return the pork to the pot and add the red wine, beef broth, tomato paste, bay leaves, thyme, salt, and pepper. Stir to combine.

Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 2 hours, or until the pork is tender.

Remove the bay leaves and adjust seasoning if necessary. Serve hot.
