How To Make Roast fillet of beef with shallot mushroom sauce

Ingredients
- 1.5 pounds beef fillet
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 shallot, finely chopped
- 8 ounces mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup beef broth
- 1/4 cup red wine
- 1 tablespoon butter
- Fresh parsley, for garnish

Preheat the oven to 375°F (190°C).

Season the beef fillet with salt and pepper.

Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the beef fillet and sear on all sides until browned, about 3-4 minutes per side.

Transfer the skillet to the preheated oven and roast the beef for about 30-40 minutes for medium-rare, or until it reaches your desired doneness. Remove from the oven and let it rest for 10 minutes before slicing.

In the meantime, heat another skillet over medium heat and melt the butter. Add the shallot and sauté until softened, about 2 minutes. Add the mushrooms and garlic, and cook until the mushrooms are golden brown, about 6-8 minutes.

Stir in the beef broth and red wine, scraping any browned bits from the bottom of the skillet. Simmer for about 5 minutes, or until the sauce has reduced slightly. Season with salt and pepper to taste.

Slice the roasted beef fillet and serve with the shallot and mushroom sauce. Garnish with fresh parsley.
