How To Make Pepper Steak Skewers with Béarnaise Sauce

Ingredients
- 1 lb sirloin steak, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 green bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 red onion, cut into chunks
- Salt and pepper, to taste
- Wooden skewers, soaked in water for 30 minutes
- Olive oil, for grilling
- for the béarnaise sauce:
- 3 egg yolks
- 1/4 cup white wine vinegar
- 1/2 cup melted butter
- 1 tablespoon fresh tarragon, chopped
- Salt and pepper, to taste
Instructions

Preheat grill or grill pan to medium-high heat.

In a large bowl, season the steak cubes with salt and pepper.

Thread the steak cubes, bell peppers, and onion onto the soaked wooden skewers, alternating as desired.

Brush the skewers with olive oil.

Grill the skewers for 3-4 minutes per side, or until steak is cooked to desired doneness and vegetables are tender-crisp.

Remove the skewers from the grill and let them rest for a few minutes.

In a small saucepan, whisk together the egg yolks and white wine vinegar over low heat until thick and doubled in volume.

Slowly drizzle in the melted butter, whisking constantly, until the sauce is thick and creamy.

Stir in the chopped tarragon and season with salt and pepper.

Serve the pepper steak skewers with the béarnaise sauce on the side.
