How To Make Roast Beef Sirloin & Béarnaise Dauphinoise

- 2 lbs beef sirloin
- 2 lbs potatoes, peeled and thinly sliced
- 2 cups heavy cream
- 4 egg yolks
- 2 tbsp chopped fresh tarragon
- 1 tbsp Dijon mustard
- Salt and pepper to taste
Instructions

Preheat the oven to 350°F (175°C). Season the beef sirloin with salt and pepper and place it in a roasting pan.

Roast the beef in the preheated oven for 1 ½ to 2 hours, or until it reaches your desired level of doneness.

In the meantime, prepare the béarnaise dauphinoise. In a saucepan, heat the heavy cream until it simmers.

In a separate bowl, whisk the egg yolks with the chopped tarragon and Dijon mustard.

Slowly pour the simmering cream into the egg yolk mixture, whisking constantly.

Place the sliced potatoes in a greased baking dish. Pour the creamy mixture over the potatoes, ensuring they are evenly coated.

Cover the baking dish with foil and bake in the oven for 40-45 minutes, or until the potatoes are tender.

Remove the beef sirloin from the oven and let it rest for 10 minutes before slicing.
