How To Make Stuffed Pepper Soup

A wonderful warming dish of stuffed pepper soup. It has the wonderful elements one would associate with good tomato sauce, and add to that the delicate flavor of tender green peppers. It's a hearty dish that would easily feed a family.

Ingredients

  • 2 lb ground beef
  • 1 can tomato sauce, (28 oz)
  • 28 oz tomatoes, (diced) undrained
  • 2 cups long grain white rice, cooked
  • 2 cups green pepper, chopped
  • 2 beef bouillon cubes
  • 2 tsp salt
  • ½ tsp pepper

Instructions

  1. In a large saucepan or Dutch Oven, brown beef; drain.
  2. Add remaining ingredients: bring to a boil.
  3. Reduce heat; cover and simmer for 30 to 40 minutes or until peppers are tender.
