For a filling and rich meal, whip up this easy couscous soup recipe, one that’s packed with heartily-seasoned chicken and tender veggies!

Ingredients

  • 2tbspcooking oil
  • 1onion
  • 1lbchicken,boneless
  • ¼tspcayenne
  • 1tspground cumin
  • tspsalt
  • ¼tspfresh ground black pepper
  • 1sweet potato,(about ½ lb)
  • 1zucchini
  • ¾cuptomato puree
  • 4cupswater,(1 quart)
  • 2cupchicken broth,low sodium
  • ½cupcouscous
  • cupfresh parsley,chopped

Instructions

  1. In a large pot, heat the oil over moderate heat. Add the onion and cook, stirring occasionally, for about 5 minutes, until translucent.

  2. Increase the heat to moderately high. Add the chicken, cayenne, cumin, salt and pepper to the pot.

  3. Cook, stirring occasionally, for 2 minutes. Stir in the sweet potato, zucchini, tomato puree, water and broth.

  4. Bring to a boil. Reduce the heat and simmer, stirring occasionally, for about 10 minutes, until the vegetables are tender.

  5. Add the couscous to the soup. Simmer for 5 minutes, stirring occasionally. Remove the pot from the heat.

  6. Let the soup stand, covered, for 2 minutes, then add the parsley.

  7. Serve warm, and enjoy!
