Ingredients

  • 1 cup dry brown lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp cumin
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Rinse lentils and put them in the slow cooker.

  2. Add chopped onion, carrots, celery, minced garlic, vegetable broth, and diced tomatoes.

  3. Add cumin, paprika, salt, and pepper. Stir well to mix all ingredients.

  4. Drizzle with olive oil.

  5. Cover slow cooker and cook on low for 6-8 hours or on high for 3-4 hours.

  6. Serve hot and enjoy!
