  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 2 carrots, sliced
  • 2 stalks of celery, sliced
  • 1 bell pepper, diced
  • 1 zucchini, diced
  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 tsp dried thyme
  • 1 tsp dried basil
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the onion and garlic to the pot and sauté until the onion is translucent.

  3. Add the carrots, celery, bell pepper, and zucchini to the pot and cook for 5 minutes, until slightly softened.

  4. Stir in the beef broth, diced tomatoes, dried thyme, dried basil, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.

  5. Serve the soup hot, garnished with fresh parsley.
