  • 1 onion, diced
  • 2 carrots, peeled and diced

  • 4 cups beef broth
  • 1 can diced tomatoes
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.

  2. Add the diced onion, carrots, celery, and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.

  3. Stir in the beef broth, diced tomatoes, frozen corn, frozen peas, dried thyme, and dried oregano. Bring the soup to a boil.
