How To Make Harvest Vegetable Soup

Serves:

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, chopped
  • 1 sweet potato, peeled and chopped
  • 2 cups butternut squash, peeled and chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 4 cups vegetable broth
  • 1 cup water
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until soft, about 5 minutes.

  2. Add carrots, sweet potato, butternut squash, thyme, and oregano. Cook for another 5 minutes.

  3. Add vegetable broth and water and bring to a boil. Reduce heat to low and let simmer for 20 minutes.

  4. Use an immersion blender to blend soup until smooth. (Alternatively, let soup cool slightly and blend in batches in a blender).

  5. Season with salt and pepper to taste. Serve with fresh parsley.
