Serves:

Ingredients

  • 1 medium pumpkin, peeled and diced
  • 2 medium apples, peeled and diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • Pumpkin seeds, toasted (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat and sauté onions until translucent.

  2. Add garlic, pumpkin, apple, cinnamon, nutmeg, salt and pepper and stir together.

  3. Pour in vegetable broth and bring to a boil. Lower the heat and let the soup simmer for 30 minutes, until the pumpkin and apples are tender.

  4. Puree the soup with an immersion blender or by transferring it to a blender until it is smooth.

  5. Add heavy cream and stir well.

  6. Serve hot, garnished with toasted pumpkin seeds.
