How To Make Mushroom Barley Soup Recipe

Ingredients

  • 1 cup barley
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 cups mushrooms, sliced
  • 4 cups vegetable broth
  • 1 tsp thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Rinse barley in cold water and set aside.

  2. In a large pot, heat olive oil over medium heat and sauté onion and garlic until translucent.

  3. Add sliced mushrooms and cook until soft.

  4. Add barley, vegetable broth, thyme, salt and pepper and bring to a boil.

  5. Reduce heat and simmer for 50 minutes, or until barley is tender.

  6. Serve hot, garnished with fresh parsley if desired.
