How To Make Carrot Ginger Soup
A creamy, comforting soup with a zing of ginger and sweetness of carrots.

Ingredients
- 1 tbsp olive oil
- 1 onion, chopped
- 1 tbsp ginger, grated
- 4 cups carrots, peeled and chopped
- 4 cups vegetable or chicken broth
- Salt and pepper, to taste
- 1/2 cup heavy cream
Instructions

Heat olive oil in a large pot over medium heat.

Add onion and ginger, cook till soft.

Add in the carrots and broth.

Bring the mixture to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the carrots are tender.

Puree the soup in a blender until smooth.

Transfer the soup back into the pot.

Add salt, pepper, and heavy cream.

Cook for 2-3 more minutes, or until the soup is heated through.

Garnish with herbs and serve hot.
