How To Make Carrot Ginger Soup

A creamy, comforting soup with a zing of ginger and sweetness of carrots.

Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 1 tbsp ginger, grated
  • 4 cups carrots, peeled and chopped
  • 4 cups vegetable or chicken broth
  • Salt and pepper, to taste
  • 1/2 cup heavy cream

Instructions

  1. Heat olive oil in a large pot over medium heat.

  2. Add onion and ginger, cook till soft.

  3. Add in the carrots and broth.

  4. Bring the mixture to a boil, then reduce the heat and let simmer for 20-25 minutes, or until the carrots are tender.

  5. Puree the soup in a blender until smooth.

  6. Transfer the soup back into the pot.

  7. Add salt, pepper, and heavy cream.

  8. Cook for 2-3 more minutes, or until the soup is heated through.

  9. Garnish with herbs and serve hot.
