Ingredients

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups broccoli florets
  • 3 cups vegetable stock
  • 1/2 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat. Add onion and garlic and cook until soft and fragrant.

  2. Add broccoli and stir for a few minutes.

  3. Pour vegetable stock and bring to a boil. Reduce heat and let it simmer for 15 minutes.

  4. Blend the soup in batches until smooth.

  5. Return the soup to the pot, and add heavy cream. Season with salt and pepper to taste.

  6. Cook for a few more minutes until warm.

  7. Serve and enjoy!
