Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can diced tomatoes
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp cumin
  • 1 tsp paprika
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper, to taste
  • Shredded cheese, for garnish
  • Sour cream, for garnish
  • Green onions, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat. Drain any excess fat.

  2. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook for another 5 minutes, until the vegetables are tender.

  3. Stir in the diced tomatoes, kidney beans, black beans, beef broth, chili powder, cumin, paprika, cayenne pepper (if using), salt, and pepper.

  4. Bring the chili to a boil, then reduce the heat to low. Cover and simmer for 2 hours, stirring occasionally.

  5. Serve the chili hot, garnished with shredded cheese, sour cream, and chopped green onions.
