Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips, shredded cheese, cilantro, and lime for toppings

Instructions

  1. Add chicken, black beans, corn, tomatoes, onion, garlic, chicken broth, chili powder, cumin, salt, and pepper to crockpot.

  2. Cook on low for 6-8 hours or high for 3-4 hours.

  3. Remove chicken and shred with two forks, then return to the pot.

  4. Serve hot with desired toppings.
