How To Make Crockpot Chicken Noodle Soup Recipe

Serves:

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups water
  • 2 cups chopped vegetables (carrots, celery, onion)
  • 1 cup uncooked egg noodles
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot and top with chopped vegetables.

  2. In a separate bowl, whisk together chicken broth, water, garlic, thyme, salt, and pepper.

  3. Pour broth mixture into the crockpot and add bay leaf.

  4. Cover and cook on high for 5 hours or on low for 8 hours.

  5. Remove chicken and shred with two forks.

  6. Add back shredded chicken and uncooked egg noodles into the crockpot.

  7. Cover and cook on high for an additional 20-30 minutes until noodles are tender.

  8. Discard the bay leaf and serve hot.
