Ingredients

  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 sweet potatoes, chopped
  • 3 carrots, sliced
  • 1 red bell pepper, chopped
  • 1 can chickpeas, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional)

Instructions

  1. Add all ingredients to the slow cooker and stir to combine.

  2. Cover and cook on low heat for 6-8 hours or until vegetables are tender.

  3. Serve hot and garnish with fresh cilantro if desired.
