  • 2 cans (15.5 oz) chickpeas, drained and rinsed
  • 1 onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup vegetable broth
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a slow cooker, combine chickpeas, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, cumin, smoked paprika, chili powder, dried oregano, salt and pepper. Stir to combine.

  2. Cover and cook on low for 6 hours.

  3. Serve hot, garnished with fresh parsley.
