Ingredients

  • 4 cups of butternut squash, peeled and diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme leaves
  • 4 cups of vegetable broth
  • ½ cup of heavy cream
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. In a slow cooker, add the diced butternut squash, onion, garlic, and thyme leaves.

  2. Pour in the vegetable broth and stir to combine.

  3. Cover and cook on low heat for 4 hours or until the butternut squash is tender.

  4. Using an immersion blender, blend the soup until smooth.

  5. Stir in the heavy cream and olive oil.

  6. Season with salt and pepper to taste.
