Ingredients

  • 1 pound of split peas, rinsed and drained
  • 4 cups of vegetable broth
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 teaspoon of dried thyme
  • 1 bay leaf

Instructions

  1. Place all ingredients into the slow cooker and stir to combine.

  2. Cover the slow cooker and cook on low for 6-8 hours.

  3. Remove the bay leaf and blend the soup until smooth using an immersion blender or transfer to a blender.

  4. Season with salt and pepper to taste.

  5. Serve and enjoy!
