How To Make Vegetarian Slow Cooker Chili Recipe

A hearty, plant-based chili that’s loaded with beans, veggies, and spices.

Serves:

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can of kidney beans, drained and rinsed
  • 1 can of black beans, drained and rinsed
  • 1 can of diced tomatoes
  • 1 cup of vegetable broth
  • 2 tsp of chili powder
  • 1 tsp of ground cumin
  • 1/2 tsp of smoked paprika
  • Salt and pepper to taste

Instructions

  1. Add all ingredients to the slow cooker and stir well.

  2. Set the slow cooker on High for 4 hours or Low for 6-8 hours.

  3. Once cooked, serve hot and enjoy!
