Ingredients

  • 1 cup dried green split peas
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 medium carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Rinse the split peas and place them in a slow cooker.

  2. Add chopped onion, minced garlic, chopped carrots, and chopped celery.

  3. Pour vegetable broth over the vegetables and peas.

  4. Add dried thyme, bay leaf, salt, and pepper.

  5. Stir the ingredients, cover the slow cooker, and cook on high for 6 hours.

  6. Remove the bay leaf and use an immersion blender to puree the soup until smooth.

  7. Adjust seasoning and serve hot.
