How To Make Vegan Slow Cooker Lentil Soup Recipe

A hearty and nutritious soup made with lentils, fresh vegetables and aromatic spices.

Preparation: 15 minutes
Cooking: 4-6 hours (slow cooker)
Total: 4 hours 15 minutes (slow cooker)

Serves:

Ingredients

  • 1 cup green lentils
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 carrots, peeled and chopped
  • 1 celery stalk, chopped
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Salt and black pepper, to taste
  • 2 tbsp chopped fresh parsley, for topping

Instructions

  1. Rinse lentils under cold water and drain.

  2. Combine lentils, onion, garlic, carrots, celery, vegetable broth, thyme, smoked paprika, bay leaf, salt and black pepper in a slow cooker.

  3. Cover and cook on high for 4-6 hours or low for 8-10 hours.

  4. Remove bay leaf and discard. Ladle soup into bowls and sprinkle with parsley. Serve hot.
