How To Make Slow Roast Leg of Lamb Recipe

Ingredients
- 1 leg of lamb, bone-in (about 3-4 pounds)
- 4 cloves of garlic, minced
- 2 sprigs of rosemary, chopped
- 2 teaspoons of salt
- 1 teaspoon of black pepper
- 2 tablespoons of olive oil
Instructions

Preheat the oven to 325°F (160°C).

In a small bowl, mix together the minced garlic, chopped rosemary, salt, black pepper, and olive oil to make a paste.

Place the leg of lamb in a roasting pan and rub the garlic-rosemary paste all over the lamb, making sure to coat it evenly.

Cover the roasting pan with aluminum foil and roast the lamb in the preheated oven for 3 hours.

Remove the foil and increase the oven temperature to 425°F (220°C). Roast the lamb for an additional hour, or until the internal temperature reaches 145°F (63°C) for medium-rare.

Remove the lamb from the oven and let it rest for 15-20 minutes before carving.

Slice the lamb and serve with your choice of sides.
