Ingredients

  • 1 leg of lamb (about 3 lbs)
  • 6 cloves of garlic
  • 1 cup pitted prunes
  • 2 tablespoons olive oil
  • 1 tablespoon dried rosemary
  • 1 tablespoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Preheat the oven to 275°F (140°C).

  2. Make small incisions all over the leg of lamb and insert the garlic cloves into the incisions.

  3. In a small bowl, mix together the olive oil, rosemary, thyme, salt, and black pepper.

  4. Rub the herb mixture all over the lamb, coating it evenly.

  5. Place the lamb in a roasting pan and add the prunes around it.

  6. Pour the chicken broth into the pan.

  7. Cover the pan with aluminum foil and roast in the preheated oven for 3 hours.

  8. Remove the foil and continue roasting for an additional 1 hour, or until the lamb is browned and tender.

  9. Remove the lamb from the pan and let it rest for 15 minutes before slicing.

  10. Serve the lamb slices with the prunes and roasted garlic. Enjoy!
